
Spaghetti Bolognese
A rich beef and tomato pasta sauce served with spaghetti, built for an easy weeknight cook.

Ingredients
- 300 g spaghetti
- 500 g beef mince
- 1 onion · finely chopped
- 2 garlic cloves · minced
- 1 carrot · finely diced
- 1 tbsp olive oil
- 400 g chopped tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 50 g parmesan · grated
- salt · to taste
- black pepper · to taste

Start the sauce
Heat the olive oil over medium heat. Add onion and carrot and cook until softened.

Brown the beef
Add the beef mince and cook until browned, breaking it into small pieces as it cooks.

Build the tomato sauce
Add garlic, tomato paste, chopped tomatoes and oregano. Stir well and bring to a gentle simmer.

Simmer
Simmer gently until the sauce thickens and the flavours combine.

Cook the pasta
Boil the spaghetti in salted water until al dente. Reserve a small cup of pasta water before draining.

Toss spaghetti with the sauce, loosening with a little pasta water if needed. Finish with parmesan and black pepper.
